Committed to sustainability

As your gaze drifts over the Pflerschtal valley, you become more and more aware of how important it is to protect nature. Safeguarding the landscape that surrounds us – a mindset that we also practise when it comes to cooking: we use food, animal products included, holistically, employ natural preservation methods in order to prevent food waste and favour micro-seasonal produce.

Kirnig Gourmet Mushrooms

In 2017, the two young South Tyrolean farmers Josef Oberkircher and Andreas Kalser ventured into a whole new direction by cultivating gourmet mushrooms. Employing state-of-the-art technologies, they grow organic Shiitake and King Oyster mushrooms of the highest quality, all year round. Mushrooms that not only boast a delicious flavour but are also rich in nutrients and vitamins. Kirnig stands for quality, sustainability and social responsibility.

Schiefer Fish Farm

The Schiefer fish farm, located in the Passiertal/Val Passiria valley, looks back on a long history. For more than 100 years, a variety of trout and char have been bred here. From the very beginning, the focus was set on quality and sustainability: breeding with love, protecting with awareness and processing by hand all contribute to providing healthy and delicious indulgence. After all, it is not just about pleasing the customer, but also nature.

Cheese from the “Genussbunker”

Tina Marcelli relies on the fine cheese specialities from the “Genussbunker” – a former bunker, relic from World War II, in which cheese master and fromelier Hubert Stockner tends raw milk cheeses from selected dairies in the Alpine region and refines them into unique specialities of a very distinctive flavour. Thanks to its favourable climatic conditions, the bunker in natural stone is perfectly suited for the ageing of hard cheese, blue cheese or Pecorino.

Karuna Chocolate

Karuna may be the pioneer of handmade chocolate in South Tyrol – a true professional when it comes to bean-to-bar craft chocolate. Only the finest, ethically traded organic cocoa beans of utmost quality are processed. Approximately a mere 0.5% of the world's cocoa beans are of this quality. The autochthonous cocoa varieties are carefully and thoroughly selected, roasted, ground and transformed into distinctive chocolate creations, some of which also flavoured.

Caffè Vergnano – Women in Coffee

Caffè Vergnano is one of the oldest coffee roasting establishments in Italy. In 2018, owner Carolina Vergnano launched a very special project: Women in Coffee. In cooperation with the International Women's Coffee Alliance, this initiative supports women who work on small coffee plantations and emphasises issues such as integration and sustainability. So, what coffee would be a better match for our predominantly female Artifex team than Caffè Vergnano?
